Since refined grains, such as white flour, have their innermost and outermost layers (their germ and bran) removed, they are stripped of a great portion of their minerals. Whole grains are not only higher in fiber but contain four times the magnesium and zinc and twice the selenium.6
Only about 15 to 25% of children eat the recommended amount of magnesium.
Even in individuals who are unwilling to make prudent changes in their diets and sedentary habits, the administration of certain nutrients and/or drugs may help to prevent or postpone the onset of Type II diabetes. |

In a study of dietary risk factors for colon cancer, all of the foods that contain highly-absorbable iron or that increase iron absorption from other foods (red meat, alcohol and refined grains), were found to increase the risk of colon cancer. All the factors that limit the provision or absorption of iron (whole grains, vegetables, citrus fruit, coffee and garlic) were found to decrease the risk. |

Salt, cheese, and refined grains work against vitamin D function because they generate acidosis and inflammation that sap calcium, magnesium, and protein from your bones and muscles.
4. Green, leafy vegetables and other kinds of produce are big members of the vitamin D booster club; they balance acid-base and preserve bone and muscle mass.

Some studies show an increased risk with higher levels of intake among smokers.
Associations appear to be stronger for younger people and those with proximal tumors. Lutein is a good marker for green vegetable intake.
Although protective effect not observed, high intake of tomatoes has been reported as protective in three studies that examined the association.

| Plant Foods: Vegetables, Fruits, Legumes, and Grains
Plant foods such as vegetables, fruits, legumes, whole grains, and refined grains are the custodians of numerous dietary constituents, including fiber, vitamins, minerals, and other potentially anticarcinogenic factors. Of these plant foods, vegetables had been one of the most consistently identified factors associated with a reduced risk of colon cancer [4]. Most studies through the 1990s reported a 30-40% reduction in risk in those with the highest level of vegetable intake relative to those with the lowest level of intake [45, 53, 57-60]. |

Cheese and refined grains promote inflammation that may overwhelm brain protective mechanisms, causing degenerative neurological disease. Conversely, fresh green produce and lean meat that's high in omega-3 fats suppress inflammation and protect brain function.
Here's how a lack of vitamin D leads to development of certain diseases.

Think of omega-6 fats, sugars, and refined grains as slow-burning fires and omega-3 fats as cool, fresh, quenching water. And now imagine the standard American diet, which generally contains a ratio of omega-6 fats to omega-3 fats of about 20:1. This is a conflagration waiting to happen—if it isn't happening already. The drastic shift in fat and refined carbohydrate consumption over the last one hundred years brings the body to a slow-burning state of inflammation. As a result, any inflammation in the blood vessels is made worse. |

The Western diet represented an eating pattern characterized by high intakes of red meat, fast foods, high-fat dairy foods, refined grains, and foods with high sugar content. The Prudent diet, on the other hand, was typified by high intakes of fruits, vegetables, whole grains, and fish and poultry. Subsequent to the initial study, these same dietary patterns were identified and validated using data from a large cohort study even though the diet questionnaire was different [197]. |

My recommendations in Chapter 2 resembles the DASH diet in many ways, but I wouldn't advise you to consume six to eight servings of grains per day, and you should avoid refined grains entirely (as in white flour).

An ecological study suggests that international variability in colorectal cancer incidence may be a result of the combination of meat intake and genetic susceptibility to heterocyclic amines [207]. refined grains and fats also contain polycyclic aromatic hydrocarbons and heterocyclic amines and may interact with variants of GST and NAT
[208, 209]. Actual DNA exposure in tissues to heterocyclic amines (HCA), polycyclic aromatic hydrocarbons (PAH), and A/-nitroso compounds seem to be particularly important for those who are rapid metabolizers of N-acetyltransferase. |

In this case, in talking about type-2 diabetes and Alzheimer's disease, what the patient usually has is a severe imbalance in blood sugar metabolism caused by three main factors: 1) Massive over-consumption of refined sugars and refined grains, 2) Lack of physical exercise, and 3) Lack of key nutrients such as trace minerals, B vitamins, essential fatty acids and others.
Notice that none of these contributing factors are "a lack of pharmaceuticals? |

For all these reasons, white refined flour and other refined grains are included in the stimulant category, as well as this list of Things to Avoid.
As you start to move away from food products made from white refined flour, be aware that because it is a simple carbohydrate, much like sugar, white refined flour can be addictive in nature. You may need to clear it from your system in order to eliminate cravings, as we will discuss in the next chapter. |

Many people don't realize what a difference there is between whole and refined grains. While whole grains are actually health-promoting, refined grains, such as pasta, white flour, white bread, and white rice, have been associated with a variety of negative health effects, such as an increased risk of colorectal, pancreatic, and stomach cancers.
If you stick with real whole grains, I promise you, you'll get full before you get fat. (How much brown rice can you eat?) You'll also increase your health span and maybe even your lifespan.

Also, you'll hopefully be making positive changes to your diet (eliminating processed foods, refined grains and all dietary sugars) and exercise habits. Vitamin D works better than prescription drugs
Did you know that most prescription drugs don't even work on most people? This was admitted by one of the top executives of a leading drug company. He said that most drugs simply don't work on most people and he gave actual numbers, such as Alzheimer's drugs only working on about a third of patients. |

Or, to put it another way, your body's metabolism gets ramped up on refined carbs because you're putting in a bunch of low-quality fuel that has no vitamins, nutrients, minerals, and antioxidants."
How are processed grains similar to low-grade fuel? Well, those refined carbs are turned into glucose more quickly, meaning that your body doesn't need to work so hard to break down and digest them, because, as Dr. Wil-lett has explained, machinery has already done the work for you during processing. |

They include sugar, honey, sweeteners, and refined grains (white refined flour or rice). In addition to causing weight gain, they can wreak havoc on your blood sugar, causing your energy to spike, then drop dramatically, which can lead to a host of other adverse health conditions. Consequently, simple carbohydrates are best kept to a minimum. They are extreme foods that fall into the category of stimulants and Eating-for-Health Guideline #2: eliminate or relegate stimulants to rare occasions. |

In restaurants it is important to inquire politely about food ingredients in various meals. I happen to be allergic to tomato, so I often ask whether tomato—in any form—might be used. Sometimes tomato powder or dried tomato pieces are used in recipes, and occasionally finely diced tomato is sprinkled on top of a meal as a garnish. |

What happened was the taste went from a salty cracker to sweet as sugar within a matter of seconds; the lesson being to demonstrate how quickly white refined flour and refined grains break down into sugar. This happens because the refining process has broken down and stripped the once whole wheat grain, a nutritious complex carbohydrate that is slowly metabolized by the body, into a simple, refined carbohydrate that is now an anti-nutrient. As such, it will not only deplete the body of vitamins and minerals, but will also raise blood sugar as it is quickly metabolized. |

Similarly, studies that have tried to ferret out the association between the different compounds present in plant foods and colon cancer have shown that, even when controlling for dietary fiber, trace minerals, antioxidants, and other nutrients found in plant foods, vegetables still remain significantly inversely associated with colon cancer [53], implying that other unmeasured compounds contained in plant foods could be protective. Biological plausibility is based on abundant evidence that components in fruits and vegetables have potential influence on carcinogenesis (Table 3). |

What if you could replace some of those ingredients with something that was loaded with outstanding nutrition?
